Summer’s here! Time for swimming, biking, sunbathing, and picnics. You’ll probably be invited to lots of outdoor gatherings with family and friends this summer, and this I’ve got a perfect recipe for a dessert that’s sure to be a hit. My mom always made this orange jell-o cake when I was growing up. It’s light, cool, and refreshing – great for a summer get-together. It’s also easy to make. With our hectic summer schedules, I’m sure everyone will like that.
Orange Jell-O Cake
1 small package orange jell-o
1 orange cake mix (can also use white or yellow mix)
1 package Dream Whip
1 small package instant vanilla pudding
1 1/2 cups milk
1/4 tsp orange extract
Make jell-o (use 3/4 cup each of hot and cold water) and set aside. Make cake (in 9 x 13″ pan). Cool 15 minutes. Using handle of wooden spoon, poke holes throughout the top of cake. Spoon jell-o into holes. Refrigerate at least 6 hours or overnight.
Mix Dream Whip, pudding, milk, and orange extract together and beat at low speed until blended. Increase to high speed and whip till soft peaks form, 4 to 6 minutes. Pour mixture over cake and spread. Then store cake in the refrigerator.
